    About this set

    The cheapest item in the range and the only one that is not a container. It earns its place in the twenty minutes of a prep session where the board fills up faster than the containers do.

    The reason it belongs on a meal prep site has nothing to do with speed. Dicing an onion by hand is not slow. What is slow is the twenty minutes at the end of a session when the board is covered in five separate piles of cut vegetables and every one of them needs somewhere to go. A catch tray means the cutting and the containing happen in the same movement.

    The blades are stainless steel in a plastic frame, with a separate organiser for the inserts that are not in use. Blades of this kind are sharp in a way that a knife is not, because there is no handle telling your hand where they are. The organiser is not an accessory, it is the thing that stops you reaching into a drawer and finding one edge first.

    Not for anything hard or fibrous. Raw carrot and beetroot will bind the grid, and stringy vegetables tear rather than cut. Onion, pepper, courgette, mushroom, apple and potato are what it is for.

    Before the first use. Wash the blade inserts by hand and dry them before they go into the organiser. A blade left wet in a closed box is the one that rusts.
